The "Pesca de Xeito" in Galicia is a traditional fishing method in which small boats set gillnets overnight close to the coast.
The sardines are caught individually and gently using the traditional Xeito fishing method, then steamed and roasted before being carefully coated with smoked olive oil.
This method allows the sardines to be caught without stress, giving them an incomparably intense and long-lasting flavor.
In the morning, the nets are hauled in and the sardines are removed individually to be processed fresh that day and offered at local auctions. Only about 200 licensed fishermen are allowed to use this technique.
The quality and flavor of Xeito sardines, which differ significantly from conventionally caught sardines, make them an exclusive delicacy for quality-conscious gourmets.
- Contents: 15 - 20 sardines
- Net weight: 130g
- Drained weight: 110g
The sardine is still today the focal point of many port cities in Brittany, but also in Spain and Portugal. It is not considered an endangered species.
