As the little brother of the traditional Calisson d’Aix-en-Provence, Maison PARLI’s Mini Calisson combines our fruity “Fé” varieties, which are made from the same ingredients as Calisson d’Aix.
Whole almonds, candied melon and candied orange peel, with candied fruits and other natural extracts added.
Without losing its character, the unique taste of PARLI’s Calissons is refined with fruity notes of clementine, pear, lemon, raspberry or fig.

By regulation, Calisson must contain at least 30% almonds; the Parli recipe contains 42% (the mixture varies slightly from manufacturer to manufacturer, as does the taste of the final product).
The candied melon, orange peel and blanched almonds are first coarsely ground and then ground even more finely in an old machine from the 1970s with granite wheels.
This prevents the almonds from being ground too finely and losing their oil and aroma: the texture of this paste is intended to remain grainy. After adding fruit syrup, the paste is gently heated and left to rest for 48 hours.
