Anne Rozès, from the French Basque Country, pickles Guindillas d'Ibarra here—slender, light-green peppers from the province of Gipuzkoa in the Spanish Basque Country. In the 300-g jar, they are packed whole, with stems, in a slightly cloudy vinegar brine. A Basque specialty traditionally served as a tapa or antipasto.
In terms of flavor, they are sweet and tangy, with mild to medium heat—significantly milder than a peperoncini or jalapeño, offering a gentle kick rather than real fire. The flesh remains firm to the bite, with a noticeable but not dominant vinegar note.
Serve them classically as a tapa, ideally with Manchego or a slice of jamón, finely chopped in an omelet or salad, or as a tangy note in a sauce.
