Grilled Peppers and Onions: The Jar That Looks South.
Le Comptoir du Fougeray is a family-run business in Eancé, on the border between Anjou and Brittany. This range is made from 100% poultry, with no pork: chicken fillets and drumsticks, accounting for 67.5% of the jar's contents, are browned in chicken fat, cooked for around 15 hours, and shredded by hand. This is combined with 6% grilled peppers and onions. When opened, you'll see reddish-tinted meat with soft pieces of vegetable, the only jar in the range with color.
Peppers only truly taste like peppers when they're grilled: they become sweet and take on a subtle smoky note. The onions add a little kick, as the manufacturer puts it, while the vegetables make the texture softer and more melt-in-the-mouth than the plain spiced jars. The result is more reminiscent of a Basque piperade than a classic rillette. Of all the jars in the range, this is the mildest.
Production: Chicken fillets and drumsticks are browned in chicken fat and then slowly cooked in a pot for around 15 hours with only salt from Guérande and black pepper. The meat is then shredded by hand and mixed with grilled peppers and onions. No additives or preservatives are used.
On toasted bread with a drizzle of olive oil, or as a spread in a sandwich with arugula. Take it out of the refrigerator half an hour before serving. Pair it with a rosé from Provence or a light red from Languedoc.
