Since the Renaissance, vinegar making in France has been inextricably linked with the picturesque city of Orléans and the majestic Loire River.
At that time, fine wines from southern France were transported by boat along the Loire to Orléans before continuing their journey overland to Paris.
During this eventful journey along Europe's most turbulent river, some of the wines began to undergo a second fermentation.
