Sopa Alentejana (bread and garlic soup from the Alentejo)

Sopa Alentejana (Brot-Knoblauch-Suppe aus dem Alentejo) - Maître Philippe & Filles

Those who know me know that I love garlic. And for those who didn't know it yet, let them be told herewith: I love garlic in all its varieties.

That is why I always particularly look forward to the new harvest of pink garlic from Lautrec, which is traditionally celebrated in this little medieval town in early August.

When the new harvest arrives at our place, the pretty pink braids fill the shop with their aroma – and the home kitchen along with it. During one of our last visits to Lisbon, I had the pleasure of enjoying a delicious soup – the Sopa Alentejana. The main ingredients? Bread, coriander, olive oil, an egg and lots of garlic!

Since I immediately lost my heart to this very simple yet delicious dish in Lisbon, I absolutely wanted to recreate the soup here. It is very easy!

Where the pink garlic comes from, why it cannot be braided, and how black garlic is made from it, we have written down here: Pink garlic from Lautrec: the story behind the bundles.
