A cassoulet always tastes good, especially when it gets colder outside. This cassoulet is an incomparable delight, thanks to the tender duck confit from Périgord.
Carefully heat the cassoulet on the stove and then transfer it to an ovenproof dish to finish baking in the oven. For the crust, you can also sprinkle some breadcrumbs on top.
Cassoulet is a stew from Languedoc in southern France, in which white beans, bacon, salted meat (confit), and sausages are simmered together. Traditionally, the dish is also baked in the oven, which creates a crust that is repeatedly broken up and stirred back in. A good cassoulet should contain seven crusts.
The cassoulet owes its name to its preparation in a "cassole", a stoneware or earthenware pot. At least three cities claim the origin of the cassoulet: Castelnaudary, Carcassonne, and Toulouse.
