"Casca" means "from another time" – and that is exactly what describes the winemaking of this wine.
Domaine Joël Delaunay in the Loire uses a vinification method here that dates back to antiquity: orange wine. The Sauvignon Blanc grapes are fermented on the skins for several days, just like a red wine – 15 days of maceration in stainless steel, without temperature control, followed by aging on the fine lees.
The result is a deep orange wine with strong streaks in the glass. On the nose, an expressive bouquet of dried mandarin peel, honey, and almonds unfolds. Orange zest and honeysuckle define the profile, supported by an elegant structure and fine minerality.
On the palate, Casca reveals itself as multifaceted and mature: ripe citrus fruits, honey, and a lingering floral aroma. The fine tannins make it approachable and allow it to effortlessly accompany a full menu. Long finish.
