The notes of citrus peel remain in the taste, which is dry, with immense tension that continues in the crisp finish full of brilliance and presence.\u003c\/p\u003e\n\n\n\u003c\/blockquote\u003e\n\u003cp\u003eHand-harvested, gentle pressing, natural decanting. Spontaneous fermentation with indigenous yeasts of 40% of the must in used 400 l barrels, of which 50% spontaneously underwent malolactic fermentation. Slow fermentation of 60% of the remaining must in barriques.
