The vines, harvested by hand in September, undergo intensive vineyard sorting, are partially destemmed, but not pressed and macerated for four months. Spontaneous fermentation takes place in cement tanks (5000L) with ambient yeasts and lasts about three weeks under temperature control. After pressing, the wine spends about two months on the lees without being stirred. The wine ages for six months in cement tanks; it is neither fined nor filtered.\u003c\/p\u003e\n\u003cp\u003eA young, seductive wine, particularly suited for the warm season.
